Ultimate Roast Beef Blues Sandwich

4 whole wheat sub rolls, lightly toasted
1/3 cup light mayonnaise
16 fresh basil leaves
1 pound thinly sliced cooked deli roast beef
3/4 cup crumbled blue cheese
1/2 cup toasted walnuts

Open the rolls and spread each side with 1 to 2 tablespoons of mayonnaise. Place 4 basil leaves on four of the rolls. Layer the same four rolls with the roast beef, 1 to 2 tablespoons of blue cheese, and a sprinkling of walnuts. Top each with the remaining half rolls.


To toast walnuts
Heat the walnuts in a dry skillet over medium-low heat until fragrant, 5 to 10 minutes. Stir frequently.

Serves 4.

I enjoyed this sandwich but wouldn't eat it often. Rush & jellybeae did not like it at all (they don't like blue cheese); Bug didn't mind it but could only eat half before he got tired of the strong flavor.

I heated the sandwich in the microwave as well to make it all melty. Yum!

Next time may try putting a garlic butter on it as well and using feta instead of clue cheese. Oh, we also added spinach leaves to the sandwich.
